Jalapeno Chicken Salad with Cilantro Lime – A refreshing chicken salad recipe with sumptuous taste of cilantro and avocadoes for a rejuvenating and healthy day. This recipe is suitable for a fresh breakfast. And you can munch it by placing in the middle of two crispy slices of French or Italian bread.

Essential Ingredients –
3 large and fresh chicken breasts
1 jalapeno (without seeds)
4 tablespoon cilantro (nicely chopped)
1 lime
1/2 red onion
1/2 cup mayo
1 tablespoon cumin seeds
2 avocadoes (ripe)
Poaching liquid

Method of cooking – 

a.) Dress chicken with sufficient amount of salt and pepper.
b.) Cook chicken breasts in poaching liquid for a maximum of 15 minutes over medium heat.
c.) Keep the chicken breasts immersed in the liquid for another 15 minutes after removing from heat.
d.) Shred chicken with the help of a fork.
e.) After chicken is brought to room temperature, add other ingredients such as mayo, cumin, lime, and mix it well. 
f.) Later, add onion, jalapeno, and cilantro. 
g.) Leave it in the refrigerator for 1 hour to allow the ingredients to stew well with chicken.
h.) Serve it with avocadoes or bread.

Mediterranean beef stew with balsamic vinegar and green olive sauce – The sour taste of a normal beef stew is eliminated in these paleo recipes with the addition of balsamic vinegar and raisins. Another essential ingredient is the herbal sauce of green olives, which is added to brighten up the curry. 

Essential Ingredients –
1 kg beef stew (sliced into half inch pieces)
1 yellow onion (chopped into small pieces)
4 garlic cloves (chopped)
1 finely chopped carrot
Half cup Raisins
100 gram Crushed tomatoes (fire roasted)
1 cup red wine
1/3 cup balsamic vinegar
Green olives sauce

Method of cooking –

a.) Preheat the oven to 180 degree Celsius.
b.) Season the beef pieces with salt and pepper (to taste).
c.) Add the beef to a pot containing fat of your choice and let it cook for the time till a clear, light brown surface appears on each side.
d.) Remove the cooked beef from the pot and place it on a plate at room temperature.
e.) Mix onion, garlic, and carrot in the pot to cook for at least 10 minutes. 
f.) Again add all other remaining ingredients such as roasted tomatoes, raisins, balsamic vinegar, and red wine into the pot and stir it vigorously. 
g.) Keep it in the microwave oven at 180 degree Celsius to cook for a minimum of 2 hours. Don’t forget to taste the curry after every one hour. The moment it tastes fine and the meat looks soft or tender, you should remove it from the oven.
h.) Serve it hot by dressing with luscious green olive sauce.
